
Vera Cebrian, Laura Vega, Leila Zafra Muñiz, Elena Torrego Moreno, Irene Molina and Guillermo Santos Sánchez, members of the Food Proteins Group, presented the workshop “Seaweeds: the superfood of the future” at the Madrid Science and Innovation Week 2024 that took place on November 6th-7th, 2024 at the Institute of Food Science Research (CIAL) in Madrid, Spain.

The Madrid Science and Innovation Week is an event for scientific dissemination and citizen participation organized by the Community of Madrid through the madri+d Knowledge Foundation whose objective is to actively involve society in research and development in science, technology and innovation. This workshop introduced basic scientific concepts to the general public and highlighted the cuisine of seaweeds. A demonstration on alginate spherifications was made and a tasting of seaweed-based teas and tartars by PORTO MUIÑOS S.L. was provided.
